Each of our beers are thoughtfully curated with the Great Pacific Northwest in close mind. Brewed with anywhere from 50-100 percent Oregon grown ingredients, our goal is to support local farms as much as possible, celebrating our regions agricultural beauty through beer.
SAISON-INSPIRED WILD ALES
Our Wild Ales are deeply inspired by the first historical Wallonian “Saisons” (french for ‘season’) brewed by farmers back in the 1800’s for their farmhands. Made with ingredients they could source locally, wild yeast and bacteria in the air, & originally intended to be low in alcohol and a safe source of
water and nutrients to sustain workers throughout the day.
We cultured our house Native Wild Yeast right from the air on a cool Winter night in Sisters, OR back in 2021. Since then, we’ve continued to feed it, keeping it happy and active in each of our oak barrels.
Our Saisons are always brewed with 100% Oregon grown malted barley, raw wheat and hops. Fermented in oak, and conditioned on rotating local fruits, herbs and spices as the seasons change. Low in alcohol, nuanced in flavor with a slightly tart, dry acidity.
Each can and keg is hand filled one at a time and conditioned in package with our Native Wild Yeast culture for natural, bright carbonation that will continue to evolve over time.
